Maybe you don’t see yourself as a confident cook. It didn’t affect your life that much when you were young, free and singing in the rain but now you have kids, it’s a bit of a problem as the little darlings can’t exactly live on breakfast cereal and dry pasta. Or maybe you’re actually a confident cook but could really do with a bit of inspiration because frankly, you’ve been on the same 2-week meal planner rotation for the longest time.
Bottom line: we’re all on different parts of the scale from “can’t boil an egg” to “serious domestic goddess” but we all need to feed our kids. As for me…well, in between the scatty mama antics and imperfect housewife habits, I actually do manage to get the odd meal on the table.
As I’m also a firm believer in the easy life, unless we’re having something ‘fancy and grown-up’ I prefer family meals to be all-in-one-pot efforts because nothing depresses me quite like the sight of every pot and pan we own piled up in the kitchen sink afterwards.
So here are some of my favourite no-stress healthy family meals that I rely on to keep everyone happy and fed.
(By the way, I don’t know about your kids but mine seem to view the proper use of a knife and fork as an Olympic challenge so if this sounds familiar, you’ll be relieved to note that most of the following recipes need nothing more than a spoon and bowl.)
