Multi-coloured Root Veg Medley

This is so NOT an actual ‘dish’ that I felt silly including this one. But sometimes the simplest ideas don’t occur to us especially when you’re having a mad day and you’re suffering from total brain freeze and lack of inspiration.  (This will easily make enough for a family of 4 with enough left over for packed lunches next day but obviously if you’re not a fan of reheating veggies, just make less!)

2-3 large sweet potatoes, cut into manageable wedges

8-10 large carrots, halved  lengthways and sliced on the diagonal (or however you prefer)

2-3 large parsnips, sliced lengthways

plenty of olive oil

salt and pepper (optional)

Throw it all into one or two large roasting tins making sure the veggies are spread out in a single layer. Sprinkle over the oil (and seasoning if using).  And roast for 45 minutes at 200 C.

Serve sprinkled with grated cheddar cheese or cottage cheese and/or turkey/ham slices.
